Hiyayakko is a simple but delicious (and nutritious) dish to serve with any summer meal.  The combinations of toppings are endless but for my hiyayakko today, I chose to add some finely chopped green onions, bonito flakes and soy sauce to my chilled tofu.

For 4 servings:

-1 pound silken (soft) tofu, drained
-3 or 4 green onions
-1/4 cup dried bonito flakes
-4 tsps soy sauce

Simply cut the tofu into the desired sized pieces, approximately 1 1/2 on each side.

Place the tofu neatly into each serving dish. Top the tofu with green onions and then bonito flakes.

Finally, drizzle a small amount of soy sauce into the bottom of the dish creating a shallow pool around the tofu for dipping. You may also serve the tofu with a small side of grated, pared fresh ginger root for some heat. Or you may wish to try it with a bit of grated daikon (Japanese radish). No matter how you top it, this delicious and refreshing side dish is a perfect addition to a summer meal.
